Refreshing Summer Cocktail Recipes

With summertime just around the corner, things are starting to heat up in San Diego.  A sizzling summer in paradise calls for icy cold drinks that capitalize on the sweet flavors of seasonal produce.

 

To beat the heat, try some summer cocktail recipes from our Bayside Lounge, which just rolled out a refreshing new cocktail menu full of frosty drinks to match its cool coastal views.  Make our bold but sweet Pisco Nuevo and the light Whatamelon summer cocktail recipes at home or visit the outdoor cocktail bar perched above the waters of Mission Bay. Also featuring limited edition wines, wood-fired flatbreads and other small plates, there’s no better place to celebrate summer with a toast, a sip, and a stunning sunset.

Summer Cocktail Recipe: Pisco Nuevo

  • 1.5 oz Pisco Portón
  • .5 oz St. Germain Elderflower Liqueur
  • 1 oz Lychee Syrup
  • 2 Lychees
  • Juice of 1 Orange

In a cocktail shaker, combine the 2 lychees, orange juice, St. Germain and Portón. Then add lychee syrup to mix and muddle. Shake well and strain into a rocks glass with crushed ice. Garnish with a slice of orange.

Summer Cocktail Recipe: Whatamelon

  • 1.5 oz Stoli Vodka
  • 1 oz St. Germaine Elderflower Liqueur
  • 2 oz Watermelon Water
  • 6 Mint Leaves
  • .5 oz Lime Juice
  • .5 oz Agave Nectar

In a cocktail shaker, muddle watermelon water and mint leaves. Add ice and the other ingredients. Shake hard and strain over ice. Top off this cool summer cocktail with a small slice of watermelon and mint.
