Already weakened by cravings for warm, hearty comfort foods to fight winter’s chill, eating-based events like Super Bowl Sunday and Valentine’s Day can deliver a debilitating one-two punch that leaves your resolution down for the count.  Instead of quitting your favorite full-fat foods flat out, replace offensive ingredients with healthier stand-ins. Case and point: this vegetarian sloppy joe recipe. By changing just a few ingredients to make the dish meatless, you have a healthy sloppy joe recipe that tastes good and is also good for you.

Recipe for Vegetarian Sloppy Joes
Makes 4-6 Servings


VEGETARIAN SLOPPY JOE RECIPE INGREDIENTS:

  • 2 tbsp extra virgin olive oil
  • 2 onions, chopped
  • 4 celery, chopped
  • 1 jalapeño, diced
  • 1 green bell pepper, diced
  • 6 cloves of garlic, minced
  • 1 lb charred corn
  • 1 lb black beans, white beans, pinto, kidney (whatever you have)
  • 1 lb smoked tofu, diced
  • 1 cup tomato sauce
  • 3 tbsp tomato paste
  • 1/2 cup barbeque sauce
  • 4 tsp chipotle sauce (sauce only – not the peppers)
  • 1 tsp your favorite hot sauce
  • 2 tsp Worcestershire sauce

VEGETARIAN SLOPPY JOE RECIPE

Heat extra virgin olive oil and sauté onions, celery, peppers, charred corn & garlic 6-8 minutes. Add remaining ingredients and allow to simmer 20-30 minutes until thick. Pile high on your favorite kind of roll, bun, or bread.
